Reports to: Campus Manager

Casual: 30 hours per week/31 weeks per year

The Campion College commercial kitchen provides dinners for our adult residential students 5 nights a week, including a formal dinner once every fortnight, occasional lunches, and catering for events.

The role is primarily required Monday to Friday from 1pm to 7pm, during Semester. Additional hours are required on a regular basis for formal dinners and events, including weekends and during Semester breaks. Some flexibility is required.

Duties and Responsibilities

  • Manage commercial kitchen
  • Oversee back-of-house operations
  • Supervise and train kitchen staff (work scheme students)
  • Develop menus in consultation with appropriate College staff, ensuring fresh food, including seasonal fruit and vegetables are incorporated.
  • Order and evaluate the quality of food supplies.
  • Stock the kitchen with necessary supplies including chemicals, disposables and cleaning items
  • Participate in the feedback process and evaluate suggestions
  • Make sure the kitchen staff follow all food safety laws
  • Ensure kitchen policies and procedures are followed
  • Prepare and serve dinners for residential students 5 nights a week during Semester time
  • Prepare and serve formal dinners every fortnight (approximately)
  • Prepare and serve meals for various events, including staff lunches, student events, conferences and residential programs, some of which occur during Semester breaks
  • Ensure that only students on the meal plan are served meals
  • Clean the kitchen and appliances daily

Minimum Knowledge, Abilities and Skills:

  • Chef qualifications - Minimum Certificate III in Commercial Cookery
  • Experience in a similar role 3-5 years
  • Food Safety Certificate or willingness to obtain
  • High standard of food hygiene and cleanliness
  • Competent food preparation and cooking skills for approximately 50-200 people
  • Experience in a commercial run kitchen
  • Ability to supervise and motivate kitchen staff
  • Working well under pressure in a fast-paced kitchen
  • Remaining calm and communicating respectfully at all times
  • Demonstrated ability to work within budget
